Pierre Boniface, Apremont, Savoie, France – Produced from a gem of a property in the French Alps region of Savoie. This white wine is made of 100% Jacquere, from 40 year old vines.
King Estate, Pinot Noir, Oregon – This red wine is farmed from world’s largest contiguous organic property, family owned and operated for 2 generations.
Colores del Sol, Malbec, Mendoza, Argentina – This red wine is a classic style Malbec from the high altitude region of Mendoza. Segura Viudas Heredad, Penedes, Spain – This sparkling wine is a Grand Reserve aged cava, made with a blend of the traditional Macabeo and Parellada grapes.
Cracked peppercorn Chevre – Matched with the Pierre Boniface because the chevre has a natural musk and earthy flavor which compliments this more mature and refined 100% Jacquere.
Reggiano-Parmigiano - Matched with the King Estate Pinot Noir because the aged, hard, nutty texture has a bitter finish which compliments the younger style of the Pinot Noir.
Gorgonzola - Matched with the Colores del Sol Malbec, because its aged quality brings the flavors out of the delicately blended Malbec.
Finally to pair with the sparkling white Cava, 3-types of house-made truffles. The first is a dark chocolate truffle infused with cayenne pepper, the second with black sea-salt, and the third a white chocolate truffle blended with cardamom.
